{"id":129,"date":"2019-01-31T16:03:29","date_gmt":"2019-01-31T16:03:29","guid":{"rendered":"http:\/\/wp.lancs.ac.uk\/flexibility\/?page_id=129"},"modified":"2019-01-31T16:03:29","modified_gmt":"2019-01-31T16:03:29","slug":"martins-aubergine-and-orzo","status":"publish","type":"page","link":"http:\/\/wp.lancs.ac.uk\/flexibility\/martins-aubergine-and-orzo\/","title":{"rendered":"Martin&#8217;s Aubergine and Orzo"},"content":{"rendered":"<p>\u2022 1 tbsp olive oil<br \/>\n\u2022 1 small onion, sliced<br \/>\n\u2022 1 garlic clove, crushed<br \/>\n\u2022 1 dried bay leaf<br \/>\n\u2022 2 tbsp thyme leaves<br \/>\n\u2022 pinch chili flakes<br \/>\n\u2022 1\/2 aubergine, cut into 1cm (1\/2in) cubes<br \/>\n\u2022 150g (5oz) orzo<br \/>\n\u2022 400g tin chopped tomatoes<br \/>\n\u2022 450ml vegetable stock<br \/>\n\u2022 \u00bd lemon, zested<br \/>\n\u2022 1\/2 x 31g pack fresh basil, leaves roughly chopped, plus extra sprigs to serve<br \/>\n\u2022 vegetarian hard cheese or Parmesan shavings, to serve<\/p>\n<p>Heat the oil in a pan over a medium heat. Add the onion with a pinch of salt and cook for 5-7 minutes, stirring occasionally, until softened.<\/p>\n<p>Add the garlic, bay leaf, thyme and chili. Cook for 2 minutes. Add the aubergine and cook for 3 minutes, stirring occasionally. Stir in the orzo, tomatoes, stock and lemon zest.<\/p>\n<p>Bring to the boil, then reduce the heat.
